Los Vaqueros, a new traditional Mexican restaurant, is now open for residents in the Highlands area.
It has always been a dream for owner Ivan Soto to open his own restaurant.
“I have been in the restaurant business for about 12 years,” Soto said. “I started as a bus boy and worked my way up. It really is a dream come true for me to open this restaurant.”
When Soto was 16, his sister brought him to Highlands, and he knew it would be his new home.
“Highlands reminds me of home,” Soto said. “The landscape is very familiar to where I am from in Mexico.”
The Mexican restaurant has been open for seven days now, and Ivan said the feedback has been amazing.
“We have been working non-stop,” Soto said. “It has been completely packed for the last week.”
Ivan hopes that when people come into the restaurant, they will enjoy the atmosphere and food.
“We hope that the customers enjoy the food, the atmosphere and the drinks,” Soto said. “We serve traditional Mexican food, as well as authentic Tex-Mex food. We have a full bar in the restaurant. We just want people to enjoy themselves while they are here. We want to provide good food and good drinks.”
Los Vaqueros is open Monday through Thursday from 11 a.m., to 9 p.m. and Fridays from 11 a.m., to 10 p.m.
